With an emphasis on local foods, professional chefs at the school provide thorough instruction in all areas of the culinary arts. You can learn about gathering and growing wild and organic foods, selecting and preserving seasonal ingredients, food preservation techniques and wine & food pairing and appreciation. You can also learn to create impressive and delicious breads, pastries and savory dishes. Expert Leadership Chef Leah Caplan brings extensive experience working with seasonal and indigenous foods to The Washington Hotel. A graduate of the Culinary Institute of America, Caplan specializes in menus that emphasize the entire dining experience, creating meals that tantalize the palate and educate the soul. As Chef de Cuisine on Little St. Simon’s Island, she developed a nationwide reputation for crafting innovative dinners from native foods. Caplan has spent her entire professional career developing menus that have garnered praise for their use of local foods and, of course, their great taste.
